Ingredients

4 cups water
2 cups plain yogurt
2 tablespoons chickpea flour ( besan )
4 green chile peppers , halved lengthwise
1 tablespoon minced fresh ginger root
1 tablespoon white sugar , or to taste
1/2 teaspoon ground turmeric
salt to taste
1 tablespoon vegetable oil
1 tablespoon ghee
2 dried red chile peppers , broken into pieces
1 sprig fresh curry leaves
1/2 teaspoon cumin seeds
1/2 teaspoon mustard seed
1 pinch asafoetida powder
1/4 cup chopped cilantro leaves
Gujarati Kadhi is a traditional food from the Gujarat region of India. This tangy and spicy yogurt-based curry is a popular comfort food that is often served with rice or khichdi. Instructions

1.In a large mixing bowl, mix water and plain yogurt until it becomes a smooth paste.
2.Add chickpea flour, green chile peppers, minced ginger, white sugar, turmeric, and salt. Mix well.
3.In a saucepan, heat vegetable oil and ghee. Add dried red chile peppers, curry leaves, cumin seeds, and mustard seeds. Cook until the mustard seeds starts splattering.
4.Add asafoetida powder and immediately pour the contents in the mixing bowl.
5.Whisk well until everything is combined.
6.In the same saucepan, heat the kadhi mixture on medium-low heat for 10-12 minutes until it comes to a boil.
7.Garnish with chopped cilantro leaves and serve hot with rice or khichdi.
