Instructions

1.In a saucepan over medium heat, bring white wine, heavy cream, coconut milk, and curry powder to a simmer.
2.Whisk in the cold, unsalted butter, one piece at a time, until completely melted and emulsified.
3.Season with kosher salt and keep it warm.
4.In a separate pan, heat vegetable oil over medium-high heat.
5.Season salmon fillets with garam masala and kosher salt.
6.Place salmon fillets in the heated pan, skin side up, sear for 2-3 minutes to form a crispy golden brown crust.
7.Flip the salmon fillets and cook for another 2-3 minutes until they're just cooked through.
