Ingredients

1 1/4 pounds ground lamb
1 cup water
1 cinnamon stick
1/4 teaspoon ground turmeric
salt to taste
1 onion , minced
1 egg , beaten
3 tablespoons chickpea flour
1 tablespoon ginger garlic paste
3 green chile peppers , minced
1 teaspoon ground coriander
1 teaspoon garam masala
1/2 teaspoon ground cumin
1/2 teaspoon ground red pepper
8 eggs
oil for deep frying
1 teaspoon chaat masala
1/2 cup chopped fresh cilantro
8 wedges lime , as garnish

Instructions

1.Boil the eggs until they are hard boiled then remove the shells and set aside.
2.In a small pot, bring the water, cinnamon stick, turmeric, and salt to a boil.
3.Add the ground lamb to the pot, reduce the heat to low, and cook for 20 minutes. Stir occasionally to prevent burning.
4.In a large bowl, mix together the cooked lamb, onion, chickpea flour, egg, ginger garlic paste, green chile peppers, coriander, garam masala, cumin, and red pepper. Mix well and knead the mixture for 10 minutes.
5.Divide the lamb mixture into 8 equal portions. Flatten each portion into a patty, wrap it around a hard boiled egg, and seal it well.
6.Heat oil in deep frying pan on medium-high heat. Fry the koftas until golden brown on all sides.
7.Remove the koftas from the oil and place them on paper towels to remove excess oil. Sprinkle with chaat masala and garnish with chopped cilantro and lime wedges. Serve hot.
