Ingredients

1/3 cup vegetable oil
1 large onion , cut lengthwise into 1/4-inch thick strips
5 fresh curry leaves
1 medium tomato , chopped
1 cup uncooked basmati rice
1/2 cup fresh green beans , cut into 2-inch pieces
1 medium carrot , peeled and cut into 2-inch pieces
1/2 cup frozen cut green beans , thawed
1 medium potato , peeled and cut into 2-inch pieces
1 teaspoon chili powder
1 teaspoon biryani masala powder
1 teaspoon salt
2 cups water
1/2 cup chopped cilantro

Instructions

1.Soak the rice in water for 30 minutes to 1 hour.
2.In a pan, heat the oil and fry the onions till they are golden brown on medium heat.
3.Add the curry leaves and tomato to the pan, sauté for a minute, and add the vegetables.
4.Add chili powder, biryani masala powder, and salt, and mix well.
5.Drain the water from the rice and add it to the pan, stir well.
6.Add 2 cups of water and bring to a boil, reduce heat, cover and cook until rice is well cooked (may take 20 to 25 minutes).
7.Garnish with cilantro and serve.
