Ingredients

2 pounds ground pork
1 pound coarse ground pork back fat
1/4 cup distilled white vinegar
Hog casing , rinsed well

Instructions

1.In a large bowl, combine white sugar, dried oregano, ground ginger, ground pepper, fine salt, curing salt, and minced garlic. Mix well.
2.Add ground pork and coarse ground pork back fat. Mix until well combined.
3.Slowly add distilled white vinegar and mix until fully incorporated.
4.Stuff mixture into hog casings and tie into 6 inch links.
5.To cook, heat a skillet over medium heat. Add sausages and cook for 10-12 minutes or until fully cooked, turning occasionally until browned on all sides.
