4 1/2 pounds beef short ribs
1 quart water
1 tablespoon black peppercorns , crushed
2 onions , chopped
2 beef bouillon cubes
2 carrots , cut in chunks
2 stalks celery , quartered
1 chayote squash , peeled and quartered
2 potatoes , quartered
salt to taste
1/4 head cabbage , cut into wedges

Instructions

1.In a large pot, bring water to a boil.
2.Add beef short ribs, black peppercorns and beef bouillon cubes.
3.Cover and cook over medium heat for 2 hours, adding water as necessary.
4.Add onions, carrots, celery, chayote squash and potatoes. Cook for 10 to 15 minutes or until vegetables are tender.
5.Season with salt to taste.
6.Add cabbage and cook for 3 to 5 minutes or until cabbage is wilted.
7.Serve hot with steamed rice.
