Biko is a traditional Filipino dessert that is commonly served during special occasions or as an everyday treat. It is a type of rice cake made with glutinous rice, coconut milk, and sugar. Biko has a sticky and chewy texture that is similar to mochi or Japanese rice cake. This dessert can be enjoyed on its own or paired with hot tea or coffee.

Instructions

1.Wash the glutinous rice and strain.
2.In a pot, combine the rice, cold water, and half (1/2) of the coconut milk. Bring to a boil and stir frequently to prevent the rice from sticking to the bottom of the pot.
3.When the rice has absorbed most of the liquid, add in the remaining coconut milk, white sugar, and brown sugar. Continue to stir and cook until the mixture is thick and sticky.
4.Transfer the rice mixture into a greased baking dish. Flatten the surface with a spoon or spatula to create an even layer.
5.Let the Biko cool down in room temperature before slicing into your desired size.
6.Serve and enjoy!

The recipe can be time-consuming since the glutinous rice needs to be cooked twice.
