Instructions

1.Begin by cooking 3 ½ ounces of green mung beans in 1 cup of water over medium heat for about 20-25 minutes until the beans are soft and mushy.
2.Mix in ½ cup white sugar and continue to cook the mixture for about 5-10 minutes while stirring constantly.
3.Once it is cooked, and the beans have a sticky and thick consistency, take it off from the heat and let it cool slightly.
4.In a separate mixing bowl, add in 2 cups of glutinous rice flour, 2 tablespoons of white sugar, and 1/8 teaspoon salt. Mix well.
5.Slowly add ¼ cup of water to the mixture and knead it to form a smooth dough.
6.Divide the dough and shape it into small balls about 1 ½ inches in diameter.
7.Flatten each dough ball and put a tablespoon of the cooked green mung bean mixture in the center. Seal the ends of the dough by pinching them together and roll the ball again to give it a smooth texture.
8.Heat up 1 quart of cooking oil in a deep pot until it reaches 350°F. Deep fry the balls in small batches until they turn golden brown and crispy, approximately 2-3 minutes per batch.
9.Once they are done, transfer the Buchi Balls to a paper towel-lined plate to drain the excess oil. Serve hot, and enjoy!
