1/4 cup chopped fresh flat-leaf parsley
1/4 cup chopped fresh mint
1 green bell pepper , seeded and chopped
1 cup chopped purslane
1/2 package arugula
4 pita rounds , toasted and torn into pieces
Fattoush is a classic Lebanese salad that is known for its bright and fresh flavors. Instructions

1.In a small bowl, whisk together the water and cornstarch until dissolved.
2.Add the lemon juice, minced garlic, sumac powder, salt, and black pepper to the bowl and whisk together.
3.In a large bowl, combine the torn romaine lettuce, diced cucumber and tomato, chopped green onion, flat-leaf parsley, mint, green bell pepper, purslane, and arugula.
4.Pour the dressing over the salad and toss to coat.
5.Add the torn pita pieces to the salad and toss lightly before serving.
