20 peeled and deveined medium shrimp
1 package long rice noodles ( rice vermicelli )
2 green onions , chopped ( optional )

Instructions

1.Heat the oil in a large pot over medium heat.
2.Add the garlic and ginger, and cook until fragrant, about 1 minute.
3.Add the spinach, salt, and pepper, and cook for another minute.
4.Pour in the chicken and shrimp stock, hot pepper sauce, and hoisin sauce. Bring to a boil, then reduce heat to low and simmer for 20 minutes.
5.Add the shrimp to the pot and cook until pink and cooked through, about 3-4 minutes.
6.In a separate pot of boiling water, cook the noodles for 3-4 minutes until tender. Drain and rinse.
7.To serve, divide the noodles among 4 bowls, ladle the soup over the top, and garnish with green onions (optional).
