Instructions

1.In a small bowl, combine 1 cup of peanut sauce, minced ginger, minced garlic, and 1 tsp of soy sauce.

3.Add snow peas, bean sprouts, and chopped green onions, and continue to stir-fry for 2-3 minutes until the vegetables are tender-crisp.
4.Remove from heat and stir in watercress, cilantro, and shredded carrots.
5.Dip one spring roll wrapper into a shallow dish of warm water for a few seconds until it is pliable.
6.Place the wrapper on a work surface and spoon 2-3 tablespoons of the chicken mixture onto the center of the wrapper.
7.Fold in the sides of the wrapper and roll tightly to form a cylinder. Repeat to make 11 more rolls.
8.Serve with the remaining peanut sauce for dipping.
