1 pound ground pork
1/2 pound shrimp , chopped
1 large carrot , peeled and grated
1 small shallot , minced
2 1/4 teaspoons Vietnamese fish sauce
1 1/4 teaspoons white sugar
1 1/4 teaspoons salt
1 1/4 teaspoons ground black pepper
24 egg roll wrappers
1 egg , beaten
oil for deep frying

Instructions

5.Lay an egg roll wrapper on a clean surface and brush the edges with beaten egg.
6.Spoon 2 tablespoons of the pork mixture onto the center of the wrapper and roll up tightly, tucking in the ends.
7.Repeat with the remaining egg roll wrappers and pork mixture.
8.Heat oil in a deep fryer or heavy pot to 350°F.
9.Fry the egg rolls in batches until golden brown, 3 to 4 minutes per batch, then drain on paper towels.
