Ingredients

1 cup red lentils
3 cups water
1 cup onion , thinly sliced , divided
4 cloves garlic , coarsely chopped , divided
1/2 teaspoon ground turmeric
1 bay leaf
3/4 cup cherry tomatoes
1/2 teaspoon salt
2 whole serrano chile peppers ( optional )
1 tablespoon vegetable oil
2 tablespoons chopped cilantro

Instructions

3.While the dhal cooks, heat the vegetable oil in a small skillet over medium-high heat. Add the remaining onions and garlic and cook until golden brown, about 3 minutes. Remove from heat and set aside.
4.Once the dhal is cooked, remove from heat and discard the bay leaf. Stir in the cilantro and the browned onions and garlic. Serve the dhal hot over rice or with warm naan bread.
