2 jars grape leaves , drained and rinsed
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon ground allspice
6 cloves garlic , sliced
1 cup lemon juice
2 kalamata olives ( optional )

Instructions

1.In a large mixing bowl, combine the uncooked white rice, ground lamb, salt, pepper, allspice, and sliced garlic. Mix well.
2.Take a grape leaf and place a small spoonful of the rice and lamb mixture in the center. Fold in the sides of the grape leaf and roll it up tightly to form a cylindrical shape. Repeat with the remaining grape leaves and filling.
3.In a large pot, place the rolled grape leaves close together in a single layer. Add enough water to the pot to cover the grape leaves. Add the lemon juice and optional kalamata olives to the pot.
4.Bring the water to a boil then reduce the heat to medium and cook the grape leaves in the pot for 45 minutes to 1 hour.
5.Remove the pot from the heat and allow the grape leaves to cool for a few minutes before serving.
