Ingredients

4 tablespoons olive oil
2 pounds boneless lamb shoulder , cut into 2 inch pieces
8 cups water
2 cups uncooked white rice
1/4 cup pine nuts
6 pita bread rounds
1 cup salted goat 's milk ( jameed el-kasih )

Instructions

1.Heat olive oil in a large pot over medium-high heat.
2.Add lamb and cook until browned on all sides.
3.Pour in water and bring to a boil, then reduce heat and cover. Let simmer for about 1 1/2 hours until the lamb is tender.
4.Meanwhile, prepare the rice according to instructions.
5.Toast pine nuts in a skillet over medium heat until golden brown and fragrant.
6.Once the lamb is tender, remove it from the pot and set it aside.
7.Reduce the remaining liquid in the pot to about 4 cups.
8.Place jameed el-kasih in a separate bowl and add some of the hot broth. Whisk until the jameed is dissolved, then pour the mixture back into the pot and stir well.
9.Add the lamb back into the pot and let it simmer in the sauce for 10-15 minutes.
10.Cut the pita bread into triangles and toast in the oven until crispy.
11.To assemble, place the rice on a large platter, then top with the lamb and sauce.
12.Garnish with pine nuts and toasted pita bread triangles.
