1 head garlic
1 teaspoon olive oil
1 can chickpeas ( garbanzo beans ) , drained
1/4 cup tahini
2 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon ground cumin , or more to taste
3/4 teaspoon kosher salt
1/2 teaspoon ground black pepper

Instructions

1.Preheat oven to 400 degrees Fahrenheit.
2.Cut off the top of the garlic head to expose the cloves, then place it on a sheet of aluminum foil.
3.Drizzle olive oil over the garlic, then wrap it tightly in foil. Roast in the oven for 35-40 minutes or until cloves are soft. Set aside to cool.
4.In a food processor, blend together chickpeas, tahini, olive oil, lemon juice, cumin, salt, and black pepper. Blend until smooth.
5.Once the garlic is cool enough to handle, squeeze the cloves out into the food processor. Blend until garlic is evenly distributed.
6.Transfer hummus to a serving bowl, garnish with a drizzle of olive oil and a sprinkle of paprika. Serve with pita chips, crackers or fresh veggies.
