Ingredients

Kabsa Spice Mix :
1/2 teaspoon saffron
1/4 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground white pepper
1/2 teaspoon dried whole lime powder
1/4 cup butter
1 onion , finely chopped
6 cloves garlic , minced
1 whole chicken , cut into 8 pieces
1/4 cup tomato puree
1 can diced tomatoes , undrained
3 carrots , peeled and grated
2 whole cloves
1 pinch ground nutmeg
1 pinch ground cumin
1 pinch ground coriander
salt and freshly ground black pepper to taste
3 1/4 cups hot water
1 cube chicken bouillon
2 1/4 cups unrinsed basmati rice
1/4 cup raisins
1/4 cup toasted slivered almonds
Al Kabsa is a traditional Saudi Arabian dish that is beloved for its rich flavors and simple preparation. Instructions

1.In a small bowl, mix together the saffron, ground cardamom, ground cinnamon, ground allspice, ground white pepper, and dried whole lime powder to make the kabsa spice mix.
2.In a large pot, heat the butter over medium-high heat. Add the onion and garlic, and cook until the onion is translucent.
3.Add the chicken pieces and cook for 5-7 minutes, or until browned on all sides.
4.Stir in the tomato puree, diced tomatoes with their juice, grated carrots, kabsa spice mix, whole cloves, ground nutmeg, ground cumin, ground coriander, salt, pepper, hot water, and chicken bouillon cube. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the chicken is cooked through.
5.Remove the chicken pieces from the pot and set aside. Add the unrinsed basmati rice and raisins to the pot. Stir well, then cover and simmer over low heat for 20-25 minutes, or until the rice is fully cooked.
6.To serve, arrange the chicken pieces on top of the rice and sprinkle with toasted slivered almonds.
