1 box shredded phyllo dough ( kataifi )
1 container ricotta cheese
1 cup shredded mozzarella cheese
1/3 cup white sugar
12 ounces unsalted butter
For the syrup :
1 cup white sugar
1/2 cup water
1 teaspoon lemon juice
1/8 teaspoon rose water ( optional )

Instructions

1.Preheat the oven to 350°F.
2.In a large mixing bowl, combine the ricotta cheese, mozzarella cheese, and sugar until well mixed.

4.Spread the shredded phyllo dough evenly in the bottom of a 9x13 inch baking dish.
5.Pour the melted butter over the shredded phyllo dough.
6.Spread the cheese mixture evenly over the dough, covering it completely.
7.Bake in the preheated oven for 30-35 minutes, or until golden brown.
8.While the kanafa is baking, make the syrup by combining the sugar, water, lemon juice, and rose water (optional) in a small saucepan over medium heat, stirring occasionally until the sugar dissolves.
9.When the kanafa is finished baking, remove it from the oven and pour the warm syrup over the hot pastry.
10.Allow the kanafa to cool for at least 10-15 minutes before serving, or enjoy it warm.
