Ingredients

1 can chickpeas ( garbanzo beans ) , drained and mashed with fork
3/4 cup panko bread crumbs
1 small unpeeled red potato , shredded
1/4 cup diced red onion

1 egg

1/2 lemon , juiced
1/2 teaspoon garlic salt
1/4 teaspoon ground white pepper

Instructions

1.In a mixing bowl, combine the mashed chickpeas, 3/4 cup panko crumbs, shredded potato, red onion, garlic, egg, olive oil, cilantro, lemon juice, cumin, salt and black pepper. Mix well until uniform throughout.
2.Take small amounts of the mixture, form into small balls and then lightly flatten them into patties.
3.Coat the patties with the remaining panko bread crumbs.
4.Heat the canola oil in a frying pan over medium-high heat. Once hot, carefully place the patties into the oil.
5.Fry the falafels on each side until they are golden brown and crispy.
6.To make the yogurt-dill sauce, whisk together the plain yogurt, chopped dill, lemon juice, garlic salt, and white pepper in a small bowl.
7.Serve the falafels hot with the yogurt-dill sauce on the side.
