Instructions

1.Preheat oven to 425 degrees F (220 degrees C).
2.Cut slits into each eggplant about 1 inch apart. Place the eggplants cut-side down onto a baking sheet.
3.Roast eggplants in the preheated oven until the skin is charred and the flesh is soft, 35 to 40 minutes. Remove from the oven and let cool.
4.Cut the eggplants in half and scoop the flesh into a bowl. Discard the skins.
5.Mash the eggplant with a fork. Add garlic and salt; mix well. Stir in lemon juice, tahini, olive oil, and yogurt. Season with cayenne pepper. Add mint and parsley; mix well.
6.Cover and chill for at least an hour before serving.
