Ingredients

1 container plain yogurt
2 cucumbers
1 medium head garlic
1/4 cup extra virgin olive oil
3 tablespoons lemon juice
1 teaspoon chopped fresh dill weed
salt and pepper to taste

Instructions

1.Line a large bowl with a cheesecloth or muslin.
2.Pour the yogurt into the lined bowl and let it drain in the fridge for an hour.
3.Meanwhile, peel and grate the cucumbers. Place them in a colander over a bowl and sprinkle them with salt. Leave to drain for 30 minutes.
4.Mash the garlic cloves with a pinch of salt into a paste.
5.After an hour, remove the yogurt from the fridge and transfer it to a mixing bowl. Add the grated cucumber, garlic paste, olive oil, lemon juice and chopped dill weed. Mix well.
6.Taste and season with salt and pepper. Cover and chill for at least an hour to allow the flavors to blend.
