Ingredients

For Sauce :
1 container plain yogurt
1/2 cucumber - peeled , seeded , and finely chopped
1 teaspoon dried dill weed
salt and pepper to taste
1 tablespoon mayonnaise ( optional )
For Falafel :
1 can chickpeas ( garbanzo beans ) , drained
1 onion , chopped
1/2 cup fresh parsley
2 cloves garlic , chopped
1 egg
2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon salt
1 dash pepper
1 pinch cayenne pepper
1 teaspoon lemon juice
1 teaspoon baking powder
1 tablespoon olive oil
1 cup dry bread crumbs
oil for frying
2 pita breads , cut in half ( optional )
1 cup chopped tomatoes ( optional )

Instructions

1.To make the cucumber sauce, combine the yogurt, cucumber, dill weed, salt, and pepper in a small bowl. Add in mayonnaise if desired for extra creaminess. Cover and refrigerate for at least 1 hour before serving.
2.To make the falafel, combine the chickpeas, onion, parsley, garlic, egg, cumin, coriander, salt, pepper, cayenne pepper, lemon juice, baking powder, and olive oil in a food processor. Pulse the mixture until it forms a dry, coarse texture.
3.Transfer the mixture to a large bowl and add the bread crumbs. Mix well.
4.Shape the mixture into small balls or patties.
5.Heat oil in a frying pan over medium-high heat. Fry the falafel balls or patties in oil until browned on all sides. Drain on a paper towel-lined plate.
6.To assemble, stuff the pita bread halves with falafel balls or patties, cucumber sauce, and chopped tomatoes (optional). Serve immediately.
