1/4 pound medium shrimp - peeled and deveined

1 tablespoon grated fresh ginger
2 tablespoons teriyaki sauce
2 tablespoons fresh lime juice
4 round sheets rice paper
1/2 cup chunky peanut butter
2 tablespoons teriyaki sauce
2 tablespoons sesame oil
2 tablespoons hot sauce
3 cloves garlic , minced
salt and ground black pepper to taste

Instructions

1.Preheat oven to 400 degrees F (200 degrees C).
2.Toss shrimp with olive oil, salt, and pepper, then roast in the preheated oven until pink and opaque, about 5-7 minutes. Let cool.
3.In a mixing bowl, combine napa cabbage, shredded carrot, minced garlic, grated ginger, teriyaki sauce, and lime juice. Mix well.
4.Dip a rice paper sheet in warm water for about 10-15 seconds until softened.
5.Place the softened rice paper on a clean surface, then add a few spoonfuls of the cabbage mixture at the bottom center of the sheet. Place a few cooked shrimp on top.
6.Roll the bottom of the rice paper over the filling, then fold in the sides and continue rolling to form a tight roll. Repeat with the remaining 3 sheets and filling.
7.In a mixing bowl, whisk together chunky peanut butter, teriyaki sauce, sesame oil, hot sauce, garlic, ginger, salt, and pepper. Add a little bit of water if needed to thin the sauce.
8.Serve the rolls alongside the peanut sauce as a dipping sauce.
