Ingredients

1 package grated coconut
1/2 teaspoon salt
5 pandan leaves , chopped
3/4 cup water
3 cups water
1 package small tapioca pearls
1 1/2 cups white sugar
3 tablespoons tapioca flour
Steamed Pandan Tapioca Pearl Cakes, also known as Kuih Koci, are a traditional and popular dessert in many Southeast Asian countries like Malaysia and Singapore. The cakes are made from glutinous rice flour, tapioca pearls, and pandan leaves. Pandan leaves give a mild, sweet, and nutty flavour to these cakes. Instructions

1.In a large bowl, mix grated coconut with salt and chopped pandan leaves.
2.In a pot, boil 3/4 cup of water. Add the small tapioca pearls into the pot and stir for 5-7 minutes until the pearls become translucent. Turn off the heat.
3.In a separate bowl, mix 1 1/2 cups of white sugar with 3 tablespoons of tapioca flour and 3 cups of water. Whisk until sugar dissolves completely.
4.Add cooked tapioca pearls into the sugar mixture and stir to combine. Let it sit for a few minutes until the mixture thickens.
5.Grease a steamer basket or use cupcake moulds and fill with the tapioca mixture. Steam for 20-25 minutes, until the cakes become firm.
6.Remove from the heat and let it cool before serving.
