Instructions

1.Rinse the hulled yellow mung beans and place them in a large pot with 3 and a half cups of water. Bring to a boil over high heat, then reduce the heat to low, and simmer for about an hour, stirring occasionally until the beans are tender.
2.In a separate smaller pot, combine the sugar and 3/4 cup of water on medium-high heat until the sugar dissolves. Remove from heat once done and set aside.
3.In a small bowl, whisk the tapioca flour with 1/2 cup of water until smooth and set aside.
4.Once the mung beans are cooked, add the sugar syrup to the pot and let it simmer for a few minutes until well combined.
5.Slowly pour the tapioca flour mixture into the pot while stirring until the pudding thickens and becomes transparent.
6.Add 1/2 teaspoon of salt to the pudding and stir until well combined.
7.In a separate small pot, heat the coconut cream until it simmers and becomes hot, then remove it from the heat and set aside. Serve the Yellow Mung Bean Pudding warm, with coconut cream drizzled over the top.
