1 skinless , boneless chicken breast , diced

Instructions

1.Rinse the dried black mushrooms, then soak in hot water for 30 minutes, rehydrating them.
2.Combine dry soybeans, chestnuts, and 4 cups of water in a pot and bring to a boil.
3.Reduce heat to simmer and cook for 45 minutes or until the soybeans and chestnuts are soft.
4.Remove the soybeans and chestnuts from the pot and set them aside separately.
5.Add the rice and 12 cups of water to the same pot and bring to a boil.
6.Reduce heat to simmer and continue cooking for 40 minutes or until the rice is completely cooked and the mixture has thickened into a porridge.
7.In a separate pan, heat vegetable oil and sauté bok choy, water chestnuts, and rehydrated black mushrooms.
8.Once the chicken is cooked, add it to the pot with the porridge, along with the contents of the pan.
9.Add chopped red dates and salt and simmer for 10-15 minutes until the ingredients are well combined and the chicken is cooked.
10.Serve hot and enjoy!
