Ingredients

4 tablespoons dark soy sauce

10 fluid ounces orange juice , divided
1 1/2 pounds pork spareribs
1 cup orange juice
1 cup water
5 sticks cinnamon
7 star anise
white sugar to taste
peanut or corn oil for frying
3 hard-cooked eggs , peeled ( optional )

Instructions

1.Combine the light and dark soy sauces, black peppercorns, garlic, and half of the orange juice in a bowl.

3.Heat oil in a deep fryer or wok to 375°F.
4.Fry the spareribs until golden brown, turning occasionally, about 6 to 8 minutes.
5.Drain the spareribs on paper towels.
6.Combine the orange juice, water, cinnamon sticks, star anise, and sugar in another large pot and bring to a boil.
7.Add the spareribs to the pot and reduce heat to simmer, covered, for 35 to 45 minutes or until the meat is tender.
8.Remove the spareribs from the pot and serve hot. Slice eggs and place on the plate together with the spareribs (optional).
