2 teaspoons salt , divided
1 whole chicken
5 cloves garlic , crushed
20 slices fresh ginger , divided
2 spring onions , cut into 2-inch pieces
3 tablespoons sesame oil , divided
2 3/4 cups white rice
2 pandan leaves
Hainanese Chicken Rice is Singapore's National dish, and it has become one of the country's most beloved dishes. It is a dish that can be found anywhere in Singapore, from the stalls on the street to the more sophisticated restaurants in the city. This dish is a combination of flavors with tender chicken that is packed with flavor, served with fragrant rice that is cooked in rich chicken broth. Instructions

1.Rinse the rice in cold water and drain. Place it in a rice cooker with 2 1/2 cups of water, 1 tsp salt and the pandan leaves. Cook until ready.
2.In a pot of boiling water, add 1 teaspoon of salt, 10 slices of ginger and 2 spring onion stalks. Lower the chicken carefully into the pot. Bring back to a simmer and cook on medium heat for 25-30 minutes until the chicken is cooked.
3.Remove the chicken from the pot and dunk it in cold water or ice water. Drain and let it rest for 10 minutes.
4.Combine 3 tablespoons of sesame oil, 15 slices of ginger and 5 cloves of minced garlic in a pan and cook on medium heat until fragrant.
5.Serve the chicken on the rice and drizzle over the sesame oil ginger sauce. Serve with garlic chili sauce.
