1/2 cup plain nonfat yogurt , or to taste

Persian Lentil Stew is a traditional dish enjoyed in Iran and other Middle Eastern countries. It is also known as Adas Polo in Farsi, which means lentil rice. This stew is a perfect main course for vegetarians or those who want to reduce their meat intake. The combination of lentils, vegetables, and spices creates a robust and flavorful dish that is both filling and satisfying. Instructions

1.Rinse the lentils in cold water and drain.
2.In a large pot, melt butter over medium heat.
3.Add chopped carrots, celery, onion, and garlic. Stir and cook until vegetables are soft.
4.Add paprika, turmeric, salt, red pepper flakes, cinnamon, and black pepper. Stir and cook for 2-3 minutes until fragrant.
5.Add olive oil, lentils, beef broth, boiling water, and beef bouillon cubes. Bring to a boil then reduce heat and simmer until lentils are tender for 45-50 minutes.
6.Add spinach and lime juice. Cook for an additional 5 minutes.
7.Serve hot with a dollop of plain nonfat yogurt on top. Sprinkle with chopped green onions and parsley for garnish.
