Ingredients

2 onions , sliced , or more to taste
3 stalks celery , thinly sliced
1/2 bunch fresh cilantro , finely chopped

4 chicken thighs
1 drizzle olive oil
1/4 cup raisins
2/3 cup chicken stock
1 large sweet potato , peeled and cubed
3 carrots , sliced
1/4 cup pitted prunes
Tagine de Poulet aux Carottes et Patates Douces, also known as Chicken and Sweet Potato Tagine, is a popular Moroccan dish that is traditionally cooked in a clay pot with a cone-shaped lid called a tagine. Tagines are known for their ability to cook food slowly and evenly, allowing the flavors to meld together beautifully. In this recipe, chicken thighs are seasoned with a blend of aromatic spices and then cooked with sweet potatoes, carrots, raisins, and prunes to create a tangy and slightly sweet stew. This is a hearty and flavorful meal, perfect for a cozy dinner at home.

Instructions

1.Preheat the oven to 375°F (190°C).
2.In a heavy-bottomed pot or oven-safe dish, heat a drizzle of olive oil over medium heat. Add the sliced onion and celery, and sauté for 5 minutes or until the onion is translucent.
3.Add the chopped cilantro and parsley, as well as the turmeric, cumin, paprika, ginger, cayenne pepper, salt, and black pepper. Mix well.
4.Add the chicken thighs and brown them on both sides.
5.Add the raisins, chicken stock, sweet potato cubes, and sliced carrots, as well as a handful of chopped prunes.
6.Cover the pot and bake in the oven for 45-60 minutes, or until the chicken is cooked through and the vegetables are tender.
