Ingredients

Sugar Syrup
1 cup white sugar
1 cup water
1 teaspoon fresh lemon juice
2 tablespoons orange flower water
Dough
2 cups all-purpose flour
2 tablespoons vegetable oil
1 egg
1/2 teaspoon fresh lemon juice
1 pinch salt
1 tablespoon orange flower water
Filling
4 cups raw almonds
1 cup sugar
3 eggs
1/2 teaspoon baking powder
1 teaspoon vanilla powder
1 lemon , zested
2 tablespoons orange flower water
cornstarch , for rolling out the dough
pine nuts , for decoration
Dziriat is a traditional Algerian pastry that is often served during special occasions such as weddings, Ramadan, and other religious festivities. These almond tarts are made with a shortbread crust and filled with a mixture of ground almonds, sugar, and eggs that are flavored with orange blossom water. These tarts are commonly served with tea or coffee, and they can be enjoyed as a sweet snack or as a dessert after a meal. The tarts are easy to make and can be stored in an airtight container for up to a week, making it an ideal treat to share with family and friends.

Instructions

1.For the sugar syrup, combine sugar and water in a medium saucepan.
2.Bring to a boil over medium-high heat.
3.Let it simmer for 5 minutes, then add fresh lemon juice and orange flower water.
4.Simmer for another 10 minutes, stirring occasionally, until the syrup thickens.
5.Remove from heat and set aside to cool.
6.For the dough, mix all the dry ingredients in a bowl and whisk together.
7.Add the wet ingredients to the dry mix to form a dough.
8.Cover and refrigerate for at least 30 minutes.
9.For the filling, grind the almonds to fine powder.
10.In a bowl, whisk the eggs and sugar together until the mixture turns pale yellow.
11.Mix the almond powder, lemon zest, baking powder, vanilla powder and orange flower water.
12.Preheat the oven to 350°F/180°C.
13.Roll out the dough on a floured surface to 1/8 inch thickness.
14.Cut into rounds and place each into a muffin tin.
15.Divide the almond filling into each tart shell.
16.Sprinkle with pine nuts and bake for 30-40 minutes, until lightly golden.
17.Remove from oven and brush with sugar syrup.
18.Let cool before serving.
