Ingredients

7 cups water
2 onions , chopped
1 tablespoon chopped garlic
1 teaspoon ground cinnamon
1 teaspoon ground turmeric
2 teaspoons garam masala
1 pinch salt and ground black pepper to taste
2 cups cooking oil
2 cups lamb meat , cut into small pieces
1 large eggplant , cut into 3/4-inch slices
2 zucchini , cut into 1/4-inch slices
1 cup broccoli
1 cup cauliflower
1 1/2 cups jasmine rice
1 container plain yogurt
Upside Down (Maqluba) is a popular Middle Eastern dish that originated from Palestine and has since spread across the region. The dish consists of layers of rice, vegetables, and meat, and is spiced with various Middle Eastern spices. The name 'Maqluba' means 'upside down' in Arabic, as the dish is flipped and then served with the rice on the bottom and the vegetables and meat on top. It is often served with a side of plain yogurt and accompanied by a fresh salad. Maqluba can be served for any occasion, ranging from family dinners to festive events.

Instructions

1.In a pot, bring 7 cups of water to a boil.
2.Add chopped onions, chopped garlic, ground cinnamon, ground turmeric, garam masala, salt, and black pepper. Simmer for 20 minutes.
3.In another pot, heat cooking oil on medium heat. Add lamb and cook until browned. Remove from heat.
4.In the same pot, layer eggplant slices, followed by zucchini, broccoli, and cauliflower. Add the cooked lamb on top of the vegetables.
5.Drain the spiced water from the onion pot and pour the liquid over the lamb and vegetables.
6.Add jasmine rice and level with a spoon. Cover and cook for 30-40 minutes, or until the rice is tender.
7.Let the pot rest for 5 minutes, then remove the lid and gently stir.
8.Serve the Maqluba with plain yogurt on top.
