Ingredients

1 cup dry garbanzo beans
1/2 cup dry yellow lentils
1 chicken bouillon cube
1 cup hot water
1 tablespoon olive oil
1 large onion , chopped
1 pinch saffron threads
1 teaspoon ground ginger
1/2 pound cubed beef stew meat , or more to taste ( optional )
salt and ground black pepper to taste
7 cups water
3 stalks celery , chopped
3 tablespoons chopped fresh parsley
3 tablespoons chopped fresh cilantro
5 tomatoes , peeled and chopped
1/2 cup uncooked orzo pasta
3/4 cup all-purpose flour
1/2 can tomato paste
Christina's Harira is a traditional Moroccan soup that's often served during Ramadan or other festive occasions and family gatherings. It also makes a hearty meal on a chilly night or when you need a comforting bowl of soup. Instructions

1.Rinse the garbanzo beans and lentils in cold water.
2.Dissolve the chicken bouillon cube in 1 cup of hot water.
3.Heat olive oil in a large pot over medium heat.
4.Add and cook onion, saffron, and ginger until tender.
5.Mix in the beef and season with salt and black pepper.
6.Stir in the remaining 7 cups of water, celery, parsley, cilantro, and tomatoes.
7.Cover the pot, bring the soup to a boil, and simmer over low heat until the beef is tender.
8.Add orzo and flour, stirring until well combined.
9.Add 1/2 can of tomato paste and cook for an additional 5 minutes.
10.Serve hot in bowls and add salt and black pepper, if desired.

PROS

Christina’s Harira is a healthy, filling soup that’s perfect for cold nights.

It can easily be made vegetarian by using vegetable bouillon instead of chicken bouillon and omitting the beef.

CONS

The downside to some is that it has a rather long cooking process that may take some time to prepare.
