Ingredients

6 cups beef stock
1 cup dry lentils
1 tablespoon olive oil , or to taste
1 onion , chopped
1 cinnamon stick
1 teaspoon minced fresh ginger root
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon ground black pepper
1 can garbanzo beans , drained
1 can red kidney beans , rinsed and drained
1 can diced tomatoes
1 cup cooked quinoa ( optional )
1 bunch flat-leaf parsley leaves and thinner stems , chopped
1 bunch cilantro leaves and thinner stems , chopped
1 lemon , or to taste , juiced

Instructions

1.In a large pot, heat the olive oil over medium heat and sauté the onion until softened.
2.Add in the cinnamon stick, ginger root, turmeric, cumin, and black pepper and cook for another minute.
3.Pour in the beef stock and bring to a boil.
4.Add in the lentils, garbanzo beans, kidney beans, and diced tomatoes and reduce the heat to a simmer.
5.Simmer for 45 minutes, stirring occasionally.
6.Add in the cooked quinoa (if using) and simmer for an additional 10 minutes.
7.Stir in the parsley, cilantro, and lemon juice just before serving.
