Instructions

1.In a high speed blender, puree peanut butter, chopped tomato, and warm water and set aside.
2.Heat olive oil in a large deep skillet over medium heat. Add onions, garlic, bay leaf, black pepper, and salt to taste and cook until onions are translucent and tender, about 5-7 minutes.
3.Add butternut squash to the skillet and cook for another 5 minutes.
