Ingredients

2 medium tomatoes , cored , seeded , and finely chopped
1 pound boneless , skinless chicken breasts , cut in 3/4-inch pieces
1 medium green bell pepper , chopped
1/2 medium onion , chopped
1/2 cup shredded Cheddar cheese

Instructions

1.Preheat oven to 350°F.

5.Pour mixture into a baking dish. Cover it tightly with foil.

7.Remove from oven and sprinkle shredded cheese on top of Chicken and Yellow Rice. Cover with foil and allow cheese to melt for a couple of minutes before serving.
