3 pounds lamb shoulder steak

2 Red Delicious apples - peeled , cored and diced
1 cup Cabernet Sauvignon wine
1 cup fresh cilantro leaves , chopped
salt and freshly ground black pepper

Instructions

1.In a large pot, add the lamb shoulder steak and lamb neck bones, cover with water and bring to a boil.

4.Remove the lamb from the pot and shred into small pieces, discarding any bones.
5.Return the lamb to the pot, along with the dried lentils, chopped onions, finely chopped garlic, and finely chopped thyme.
6.Bring the mixture to a boil and then reduce heat to low. Simmer for another 1 hour.
7.Add the peeled, cored, and diced red delicious apples along with Cabernet Sauvignon wine to the pot and continue cooking for another 10 minutes, until the apples are soft.
8.Season the soup with salt and freshly ground black pepper to taste.
9.Garnish with fresh cilantro leaves before serving.
