2 poblano peppers , chopped
1/2 cup sliced mushrooms ( optional )
8 roma tomatoes , diced
2 cans diced tomatoes with green chile peppers , drained
1 teaspoon lime juice
3/4 cup chopped cilantro
2 teaspoons salt
2 teaspoons black pepper

Instructions

1.In a large skillet, cook the diced bacon over medium heat until crispy.
2.Add the minced garlic and cook for 1 minute until fragrant.
3.Add the red onions, green onions, green bell peppers, yellow bell peppers, jalapeno or serrano peppers, poblano peppers, and mushrooms. Cook for 10 minutes until the vegetables are soft.
4.Add the diced and canned tomatoes, lime juice, cilantro, salt, and black pepper. Cook for an additional 10 minutes until everything is incorporated and the sauce is thickened.
5.Using a blender or food processor, blend the hot sauce until smooth. Serve as desired.
