1 beef bottom round roast or other lean roast

1 can chopped green chilies
2 teaspoons chili powder
1 teaspoon cayenne pepper
1 tablespoon garlic powder

1 can chipotle peppers in adobo sauce , or to taste
1 cube beef bouillon

Instructions

1.Preheat oven to 275 degrees F (135 degrees C).
2.Season the roast on all sides with black pepper and place in a Dutch oven.
3.Top the roast with onion, green chilies, chili powder, cayenne pepper, garlic powder, and cumin.
4.Pour chipotle peppers with adobo sauce over the top of the roast.
5.Crumble beef bouillon cube over the top of the roast.
6.Cover the Dutch oven with a lid and bake in the preheated oven until beef is very tender, about 6 hours.
7.Remove the roast from the Dutch oven and shred with two forks.
8.Return shredded beef to Dutch oven and stir to combine with the cooking liquid.
9.Serve as desired, with tortillas, rice, or on its own.
