Ingredients

Salad :
4 ounces tender , thin green beans
1 Yukon Gold potato , peeled and cut into 1/2-inch dice
1 tablespoon olive oil
3 ounces oil-packed tuna , drained
1/2 cup cherry tomato halves
1/2 cup pitted nicoise olives
1 hard-boiled egg , chopped
1 anchovy fillet ( optional )
1 tablespoon chopped fresh parsley
Avocado French-Style Vinaigrette :
1 tablespoon Dijon mustard
3 anchovy fillets
3 tablespoons white wine vinegar
2 tablespoons lemon juice
2 teaspoons minced shallots
1 teaspoon minced fresh tarragon
1/4 cup ripe avocado
1/3 cup olive oil , or more to taste
1 teaspoon freshly ground black pepper
1 pinch cayenne pepper
This summery Layered NorCal Nicoise Salad is a spin on the classic version, but with a Californian twist. This salad hailing from the south of France is hearty, light, and full of fresh ingredients. While traditional Niçoise salads usually include lettuce, this version replaces it with lightly blanched green beans and Yukon gold potatoes - a perfect substitute that adds heartiness and great texture to the dish. Topped with olives and and oil-packed tuna, this salad is both nutritious and delicious.

Instructions

1.Start by blanching the green beans for 3-4 minutes or until slightly tender.
2.Remove the green beans and place them in a bowl of ice-cold water to stop the cooking process and retain their bright green color.
3.Boil the potatoes until tender but not mushy for about 5-6 minutes on medium heat.
4.In a small bowl, whisk together the Dijon mustard, anchovy fillets, vinegar, lemon juice, shallots, tarragon, ripe avocado, olive oil, black pepper and cayenne pepper until fully combined.
5.In a separate bowl, mix together the potatoes, tuna, cherry tomatoes, and olives.
6.Assemble the salad, placing a layer of green beans at the bottom of a salad dish.
7.Add the potato mixture and layer that on top of the green beans.
8.Drizzle the Avocado French-Style Vinaigrette on top, then garnish with boiled eggs, anchovy fillets, parsley, and extra black pepper.

This Nicoise salad has a beautiful combination of colors and textures, it’s super easy to assemble, and it’s a healthy and refreshing meal that’s perfect for warm weather.

CONS

Some people might not be fans of anchovy fillets or nicoise olives, and this salad might not be filling enough for those who are looking for a heavier meal.
