Ingredients

1 pound catfish fillets
1 medium onion , chopped
1 teaspoon prepared yellow mustard
1 tablespoon creamy salad dressing ( e.g . Miracle Whip )
1/2 teaspoon Old Bay Seasoning TM , or to taste
2 1/2 cups coarsely crushed buttery round crackers
1 egg
1 cup vegetable oil ( for frying )

Instructions

4.Season with Old Bay Seasoning and mix everything well.

6.Refrigerate the mixture for 10-15 minutes.
7.Form small cakes from the mixture (2-3 inches in diameter).
8.Heat the vegetable oil in a non-stick frying pan.
9.Fry the catfish cakes until golden brown on both sides, about 2-3 minutes per side.
10.Drain the cakes on a paper towel to remove any excess oil. Serve hot with your favorite dipping sauce.
