Instructions

1.Spray a large baking sheet or two with nonstick spray and set aside.

4.Continue cooking the mixture, stirring constantly, until it reaches the soft ball stage (235-240 degrees F on a candy thermometer).
5.Remove the pot from the heat and stir in the vanilla and pecans.
6.Continue stirring until the mixture begins to thicken and lose its sheen, about 5 minutes.
7.Quickly drop spoonfuls of the mixture onto the prepared baking sheet(s), making sure to leave enough space between each praline.
8.Let the pralines cool completely before serving.
