Ingredients

3 tablespoons bacon drippings
2 large onions , chopped
8 pounds beef stew meat , or coarse ground chili beef
5 cloves garlic , finely chopped
4 tablespoons ground red chile pepper
4 tablespoons mild chili powder

1/4 cup sweet Hungarian paprika
1 teaspoon dried Mexican oregano
3 cans tomato sauce
1 can tomato paste
3 cups water
2 tablespoons salt
1/4 cup dried parsley ( optional )
1 fresh jalapeno peppers
1 cup masa harina flour

Instructions

1.In a large pot or Dutch oven over medium heat, add bacon drippings and onions. Cook until the onions are translucent.
2.Add the beef and garlic, and cook until browned.
3.Add the red chile pepper, chili powder, cumin, paprika, and oregano. Stir well.
4.Add tomato sauce, tomato paste, water, salt, and parsley. Stir well.
5.Cut the jalapeno pepper in half and remove the seeds. Add only one half to the pot.
6.Bring the chili to a boil, then reduce heat and simmer for 2 hours. Stir occasionally.
7.After 2 hours, whisk together the masa harina flour and 2 cups of water. Add to the pot and stir well.
8.Simmer for an additional hour, stirring occasionally. Add more water if necessary to reach desired consistency.
