Ingredients

4 cups water
1 package yellow rice
5 tablespoons olive oil , divided ( optional )
1 pound boneless chicken , cut into 3/4-inch cubes
1 package chicken taco seasoning mix
1 can black beans , rinsed and drained
1 1/2 cups shredded Mexican cheese blend
1 can sliced olives
1 jalapeno pepper , seeded and minced
12 corn tortillas
1 tablespoon bacon grease

Instructions

1.In a medium saucepan, combine the yellow rice and water. Bring to a boil, reduce the heat, cover and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.
2.Meanwhile, preheat oven to 375°F.
3.Coat a large skillet with 2 tablespoons olive oil (optional) and heat over medium-high heat. Add the chicken and taco seasoning mix, cook stirring occasionally, for 7-8 minutes or until the chicken is golden brown. Remove chicken from skillet and set aside.
4.Add the remaining olive oil (optional) to the skillet and heat over medium heat until hot. Stir in the black beans, continue stirring occasionally, for 2-3 minutes, or until heated through.
5.To assemble tacos, spoon some yellow rice on each tortilla, top with chicken, black beans mixture, Mexican cheese blend, olives, and jalapeno. Fold tortillas and place in a baking dish. Drizzle melted bacon grease over the top of tacos.
6.Bake in 375°F oven for 10 to 12 minutes or until the tacos are heated through and cheese is melted.
