Ingredients

1/4 cup vegetable oil , divided
1 pound skinless , boneless halibut fillets
1 pinch salt and ground black pepper to taste
1 cup shredded Italian cheese blend
1 egg
1/4 cup mayonnaise
1/4 cup minced onion
2 tablespoons lemon juice
2 tablespoons panko bread crumbs
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon dry mustard
3/4 cup panko bread crumbs

Instructions

1.Preheat oven to 375ºF. Grease a baking sheet with 1 tablespoon of vegetable oil.
2.Season the halibut fillets with salt and pepper.
3.Bake the halibut fillets for 10-12 minutes or until lightly browned and cooked through.
4.Flake the cooked halibut into a large bowl using a fork.
5.Add Italian cheese blend, egg, mayonnaise, onion, lemon juice, 2 tablespoons of panko bread crumbs, Worcestershire sauce, garlic powder, and dry mustard to the bowl and mix until well combined.
6.In a shallow dish, spread the remaining panko bread crumbs.
7.Using your hands, shape the halibut mixture into 8-10 patties and coat each patty in panko bread crumbs, pressing the crumbs into the patties.
8.Heat the remaining vegetable oil in a large nonstick skillet over medium heat.
9.Add the coated patties to the skillet and cook for 4-5 minutes on each side or until golden brown and crispy.
