2 duck legs
1 cup all-purpose flour
2 tablespoons all-purpose flour

1 cup pickled okra , rinsed and sliced
1 pound gulf shrimp
1 pound crawfish tail meat
1 tablespoon chopped green onion ( optional )

Instructions

1.Heat vegetable oil in a large, deep pot over medium heat.

5.Gradually whisk in the chicken broth, making sure there are no lumps.
6.Add the andouille sausage, onion, peppers, celery, green onions, dried thyme, bay leaf, black pepper, and cayenne pepper.
7.Stir in fresh tomatoes, smoked ham hock, and water, adding more if needed.
8.Bring to a boil, then reduce heat and let simmer for 2 hours.
9.Add pickled okra and cook for 10 minutes.
10.Add gulf shrimp and crawfish tail meat, cooking for an additional 10 minutes.
11.Remove the bay leaf and ham hock.
12.Shred the duck meat off the bones and discard the bones.
13.Add the shredded duck meat into the pot.
14.Serve hot, garnished with chopped green onion if desired.
