Ingredients

1/4 cup butter
1 onion , chopped
1/2 can evaporated milk , or as needed
3/4 pound cooked and peeled whole crawfish tails
24 brown and serve pistolette rolls
2 quarts vegetable oil for frying

Instructions

1.Melt butter in a sauté pan over medium heat, add onion, and cook until translucent.

3.Using a small knife, cut a circle out of the top of each roll and remove the center to create a small pocket.
4.Stuff each roll with crawfish mixture.
5.Heat oil to 350°F in a deep fryer or large pot. Fry rolls until golden brown, approximately 3-5 minutes. Drain on paper towels before serving.
