1 1/2 teaspoons gumbo file powder

1/2 pound large shrimp , peeled and deveined
1/2 pound andouille sausage , sliced
1 1/2 teaspoons Cajun seasoning

1/2 teaspoon ground cumin
1/4 cup chicken broth
16 littleneck clams

Instructions

1.Preheat the oven to 400°F.
2.Cut eight 16-inch squares of parchment paper and coat with cooking spray. Place 1/4 cup of cooked rice in the center of each square of parchment paper. Sprinkle with gumbo file powder, Cajun seasoning, garlic powder and ground cumin.
3.In a bowl, toss tomatoes, red and green peppers, green onion, okra, Cajun seasoning, crawfish, shrimp and andouille sausage with garlic powder and ground cumin. Divide the mixture evenly over the rice. Spoon 1 tablespoon chicken broth over each serving.
4.Divide the clams evenly among the servings. Bring up two sides of parchment paper and fold down several times. Fold in the sides of the package to seal. Set packets on a baking sheet.
5.Bake in preheated oven for 25 minutes.
6.Carefully cut open packets and serve.
