Ingredients

1 bunch fresh asparagus spears
1 cup water
1 cup white wine vinegar
1/4 cup brown sugar
4 cloves garlic , crushed
1 jalapeno pepper , seeded and julienned
4 sprigs fresh thyme
2 tablespoons Old Bay Seasoning TM
2 bay leaves
1 teaspoon salt
6 whole black peppercorns
Pickled asparagus is a great way to enjoy this vegetable when it is in season and abundant. Asparagus spears are blanched and then pickled in a mixture of vinegar, sugar and spices that gives it a unique and tangy taste. This recipe can be done with other vegetables such as carrots, green beans or cauliflower, making it a versatile recipe. Instructions

1.Cut the tough ends off the asparagus spears, and blanch them in boiling water for 2-3 minutes.
2.Remove asparagus and put them immediately into a bowl of ice water to stop further cooking.
3.In a medium saucepan, combine water, vinegar, brown sugar, garlic, jalapeno pepper, thyme sprigs, Old Bay seasoning, bay leaves, salt, and peppercorns.
4.Over high heat, bring the mixture to a boil, then reduce heat to medium-low and simmer for 10 minutes.
5.Let the mixture cool slightly and pour it over the asparagus in sterilized jars.
6.Seal jars tightly and place them in the refrigerator for at least a day before eating.
