Instructions

1.Preheat the oven to 350°F (180°C).
2.For the Mashed Potato Crust, mix mayonnaise, Parmesan cheese, kosher salt, black pepper, eggs, and flour in a bowl.
3.Spread the mixture over the rib roast.
4.For the Crispy Outer Potato Crust , mix panko bread crumbs and crushed potato chips in a small bowl.
5.Coat the rib roast with the mixture and set aside.
6.Season the rib roast with salt and pepper.
7.In a large roasting pan, add 1/4 cup all-purpose flour and place the rib roast.
8.Roast for about 2 1/2 to 3 hours or until the internal temperature reaches 135°F (57°C).
9.Remove from oven and let it rest for 15 minutes before slicing and serving.
10.Serve with whole-grain mustard.
